Application

脂肪酶在工业上用于手性化合物的拆分和生物柴油的酯交换生产。
脂肪酶(来自皱褶假丝酵母)已用于:
  • 合成葡聚糖脂肪酸酯
  • 研究在葵花籽油和蓖麻油存在下,脂肪酶对共轭亚油酸(CLA1和CLA2)生产的影响
  • 制备pH印迹酶(pH-imprinted enzyme),用于脂肪酶催化的葡聚糖T-40和癸酸乙烯酯的酯交换反应

Biochem/physiol Actions

脂肪酶是催化三酰基甘油水解成甘油和游离脂肪酸的酶和生物催化剂。脂肪酶可用于生物转化反应。具有广泛的底物容忍度和高度的空间和区域选择性。脂肪酶介导脂质转运。在胰腺炎中观察到了血清脂肪酶的水平升高。脂肪酶是长链脂肪酸的常用催化剂。脂肪酶可在大量水性和非水性介质溶剂之中使用,因此已已应用于有机合成等应用。

Other Notes
