General description
淀粉葡萄糖苷酶是一种 a 1,4-α-葡萄糖水解酶，同时也是一种双糖型α葡萄糖苷酶。它是由多种曲霉属微生物合成的。这种胞外酶是主要的工业酶之一。通过固定化可以增强淀粉葡萄糖苷酶的稳定性。

Biochem/physiol Actions
来自黑曲霉（Aspergillus niger）的淀粉葡萄糖苷酶能够水解淀粉和麦芽寡糖的 α-D-(1-4) 和 α-(1,6)-糖苷键。淀粉葡萄糖苷酶是一种胞外酶，可以将淀粉转化成糊精和葡萄糖。在淀粉加工工业中该酶用于由玉米糖浆商业生产D-葡萄糖。
可水解与多个葡萄糖单元的寡糖或多糖 α1,4-或 α1,6-连接的末端葡萄糖。本产品是 D-葡萄糖。
