General description

Biochem/physiol Actions
α-淀粉酶介导淀粉、麦芽寡糖和糖原在α-D-(1,4)-糖苷键上的水解。芽孢杆菌是α-淀粉酶异构生产的重要细胞工厂。此外,还有从枯草芽孢杆菌菌株中提取到细胞外分泌的耐热淀粉酶的报道。
